Bjorn and I came up with this quiche recipe one day when he was home from school during a blizzard! I suppose another name for this could be “Snow Day Quiche,” because now we’ve made it on two separate occasions when we’ve been cooped up inside due to the winter weather! 🙂
We’ve had crepes before that involved ham, cheese, and broccoli, and it’s such a winning combination. The flavors work beautifully together in a quiche as well! (And the white cheddar adds a lot!) This quiche makes a great meal when you add a side of chopped salad and some fresh fruit. Hope you enjoy it as much as we do!
Note: while this IS an easy, simple recipe, it does take a little while to bake. That’s not a big deal as long as you give yourself about 40 minutes or more to bake it! I’m speaking from experience. It’s not a very-last-minute meal idea but definitely really workable if you start it at least an hour in advance 🙂
Ham, White Cheddar, & Broccoli Quiche
- 1 pie shell (we like to buy frozen pie crusts because they’re super easy to take out of the freezer and thaw as we whip up the rest of the recipe)
- 1.5 cups broccoli florets, chopped up quite small
- 1.5 cups ham, chopped up into small cubes
- 1 small onion, diced (~1/2 cup)
- 1 heaping cup white cheddar, grated (I like to buy a regular-sized block of white cheddar and then grate it fresh for the recipe; it takes grating almost a whole block of the cheese)
- 6 medium eggs (I recommend erring on the side of fewer eggs, actually, because you don’t want to overfill your pie crust when you pour this in!)
- ~1/2 cup whole milk or heavy cream
- garlic powder
- olive or avocado oil
- black pepper
Remove pie shell from freezer and let it thaw as you make the rest of the recipe. Preheat oven to 375 degrees.
Heat a couple tablespoons of olive or avocado oil in a large skillet/saucepan. Saute onion, ham, and broccoli for about 5-7 minutes until the vegetables are soft. Season the mixture with a few shakes of salt, pepper, and garlic powder.
In a medium bowl, whisk together 6 eggs with a generous splash (~1/2 cup) of whole milk or heavy cream. Whisk in a little more salt and pepper. Set aside.
Once the ham and veggie mixture is soft and heated through, put that into the pie shell. Then pour the egg mixture on top.
Finally, add the heaping cup of grated white cheddar on top. Sprinkle with a little pepper.
Bake for ~40 minutes at 375 degrees, or until top is a bit browned and center of the quiche appears more firm.
