Greek Turkey Pitas with Yogurt Sauce: An Easy Supper Recipe
Looking for a new recipe to try? I recently shared this sentiment in my meal planning post, but I really love finding new meal ideas that I can incorporate into our recipe rotation! There’s something comforting about already knowing you’ll enjoy the meal you’re making tonight, you know? (For instance, tonight I’m making Thai Red Curry and I know that it’ll be delicious!)
Well, I’ve made the recipe in this blog post for supper a couple times now, and it’s an especially flavorful and yummy meal. I found a similar recipe on another blog, but by the time I changed ingredients as well as the preparation style of it, it became a totally different recipe, haha. And that’s why I’m sharing it with you today. I’ve come up with a version that I love. If you like Greek food and things like gyros, then you’ll definitely enjoy this one!
A quick note: my husband isn’t a super picky eater, but he certainly does not like cucumbers, so I modified the tzatziki sauce for his sake and swapped out the cucumbers for zucchini. Obviously, it doesn’t have that more bright cucumber flavor, but it’s still really delicious, it’s a good way to get veggies into the recipe, and it’s a great option if you have people in your household who aren’t fans of cucumbers either. You can still use cucumber in place of the zucchini if you’d prefer.
I always love hearing others’ easy meal ideas, so my hope is that this idea may help you with supper on an upcoming weeknight! 🙂
Greek Turkey Pitas with Yogurt Sauce:
Makes enough meat for about 4 pitas and potentially more, depending on how much you fill them with the additional toppings.
Ingredients:
For the meat:
1 lb. ground turkey
1 cup spinach, chopped
1/4 cup red onion, finely chopped
2 cloves minced garlic
1 teaspoon oregano
salt and pepper
For the sauce:
1/2 cup plain Greek yogurt (I just buy a little “breakfast size” container of it, since we don’t really eat plain Greek yogurt)
2 tablespoons lemon juice
1/4 cup grated zucchini
1/2 teaspoon dry dill
1/2 teaspoon garlic powder
salt
For the the pita assembly:
Pitas or flatbreads
Diced tomatoes, diced zucchini, slices of red onion
What to do:
1 // In a large bowl, mix together turkey, spinach, red onion, minced garlic, oregano, and salt and pepper. (Honestly, it’s usually easiest to mix it together with clean hands rather than a spoon.)
2 // Heat the meat mixture in a skillet on medium high heat, stirring and chopping frequently, until meat is fully cooked.
3 // In the meantime, mix together all sauce ingredients in a small bowl: yogurt, lemon juice, grated zucchini, dry dill, garlic powder, and salt.
4 // Serve the meat warm in pitas. Top with toppings like tomatoes, diced zucchini, and red onion slices. Spoon yogurt sauce on top. Enjoy!
