Avocado open-faced sandwich.
Some days, sandwiches and leftovers get old and all you need is a quick, healthy lunch idea! In the market for something different and fresh? Try this avocado open-faced sandwich! I saw a picture of this idea as I was scrolling through my Pinterest feed the other day and decided to give it a try.
All you need to do is toast 2 slices of bread (it really is best if you toast it), cut (and smash? is that an acceptable foodie term?) an avocado so you can spread it on the bread. Spread hummus on next, and lay cucumber slices on top. Sprinkle with a dash of pepper and you’re good to go!

Oh this looks delicious! We don’t have any premade bread sitting around usually– we’re much more into rice and pasta (and occasionally baking bread from scratch). But I love the idea of putting bits of things on an open-face sandwich– brilliant!
