Apple Feta Salad
This post is an old favorite pulled from my archives. With spring finally here, this salad is the perfect fresh side dish (or, let’s be honest, a main dish because it’s just that good!). 🙂
My dear friend Jordan and I get together whenever we can – we live about 2 hours apart but we still do our best! 🙂 Once when we ate supper together, she introduced me to this amazingly delicious side dish that she and her husband love!
This fresh salad with apple slices and feta is such a fun addition to any meal (although like I said, you can always just make a big portion and eat it for your whole lunch!). You’ll definitely have to try this recipe out – not only is it yummy, it looks beautiful, too! Thanks for coming up with this awesome combination, Jordan! 🙂
Apple Feta Salad
Gather:
- 1 Honeycrisp apple
- Lettuce (or spinach)
- Crumbled feta cheese
- Sunflower or pumpkin seeds (I forgot to buy pumpkin, so I’ve been using and loving sunflower seeds!)
- Balsamic vinegar
- Olive oil
What to Do:
Arrange lettuce on 2 plates (or in bowls). Slice the apple as thin as possible. Arrange apple slices on top of lettuce. Sprinkle feta cheese and seeds on top. Drizzle vinegar and olive oil on top. Enjoy! 🙂
** Makes 2 large side salad servings.

Mmmm I love feta, especially when combined with sweet favorites. A mint, watermelon, and feta salad was one of our go-to’s this summer! So good!
