Some days, sandwiches and leftovers get old and all you need is a quick, healthy lunch idea! In the market for something different and fresh? Try this avocado open-faced sandwich! I saw a picture of this idea as I was scrolling through my Pinterest feed the other day and decided to give it a try. All you need to do is toast 2 slices of bread (it really is best if you toast it), cut (and smash? is that an acceptable foodie term?) an avocado so you can spread it on the bread. Spread hummus … [Read more...]
Chankaska Creek Ranch & Winery
My husband and I became fans of visiting wineries (and cideries) while we lived in Virginia last summer…so this past weekend we were thrilled to find a lovely winery near us here in Minnesota! Chankaska Creek Ranch and Winery is located near St. Peter, MN, and is just minutes from Hwy 169, for you local folks! :) I first heard of the Chankaska Creek Ranch & Winery on a highway billboard, actually! Bjorn and I found ourselves with a couple extra hours in the area, and the weather was … [Read more...]

Leaf collecting.
When we were little, Mom used to take us kids outside to make "nature bracelets." We'd each get a loop of masking tape on our wrist, with the sticky side out - the perfect blank canvas for us to decorate with whatever little grass pieces or leaves we thought were especially pretty. It was such a fun little activity! I'd love to continue it with my own little ones someday…it really filled us with wonder and appreciation for what God made…even if we were collecting random tiny twigs, dead … [Read more...]
{TAKE ME TO} a Virginia winery.
So I've got to admit, it feels a bit belated/silly to share a Virginia post tonight, considering I'm back in Minnesota. But this was a leftover post that just never made it up onto the site this summer, and man, it's a lot of fun going back through these pictures. It allows me to re-live just a little bit more of this past honeymoon summer of ours before autumn and winter hit us in all their glory! :) Bear with me on the fact that this summery post is coming to you a while AFTER I got back from … [Read more...]
Green smoothie craze | how-to.
Happy Saturday, everyone! It's hard to believe that we're 2 days into the 2014-15 school year already! It was a pretty low-key but productive first week; I have a new position this year so I'm adjusting to what that will look like over the next 9 months, and I spent the past few days doing a lot of prep work and computer work. I really enjoy it and I'm excited about it…it's always nice to have a weekend, though. :) We've got GORGEOUS weather over here in southern MN, which made hanging clothes … [Read more...]
Proper Pie Co.
Ever take a bite of pie and wonder if you could just, well…make a whole meal of it? Us too. (Remember this picture from earlier? We like pie in this household.) And thanks to a dear friend of mine who sent me an article of must-try food stops in Richmond, we made that dream come true. Enter: Proper Pie Co. with its whimsical vibe and delicious eats!! They've got a whole menu of savory AND sweet pies, so when we went there for lunch, we did the logical thing and ordered one of … [Read more...]
6-Ingredient Amish Goulash.
Might as well stick with the theme of this week, right? :) Last weekend, Bjorn found - and then promptly bought - this awesome little cookbook for me! Who could pass up a book with such a specific, practical title?? :) At first, it was funny (okay, it kind of still is) but after thumbing through the pages, I caught my usual must-cook-something fever. And so, this non-Amish young lady decided to make something for her young husband - specifically, the easiest and most delicious goulash I've … [Read more...]
