An amazing weeknight meal…and the leftovers are great, too!
2. Pumpkin Dip
This makes a LOT so it’d be perfect to bring to a party or gathering… We also tried dipping graham crackers in it, which was amazing. Tasted just like a pumpkin pie. 🙂
3. Crock Pot Sweet Potato Turkey Quinoa Chili
This recipe just may be the best one of all! I made this on a weekend, and had my mother-in-law and sis-in-law over for supper. They really enjoyed it, and I even had enough leftovers to freeze! The avocado on top really adds a lot.
Speaking of avocados… Bjorn and I love caprese salad. It’s kind of our thing. (We love it so much, in fact, that we had caprese kebabs as a custom appetizer at our wedding!) This is a fun and healthy twist on the salad.
I’ll be honest – I liked this more than my husband did, but it was still a nice comfort-food type meal. We froze and reheated the leftovers for a while after I made the whole batch!
